Apple Hand-pies

Surprise! Foodies has a new look! This is the reason we haven’t been able to post in the last month. We have been at work so hard to make this gorgeous site for you. Between the revamp and a new and exciting partnership we’re going to launch on Wednesday 4th, its been a hectic month.

This Apple Hand-pies recipe I was able to bake before our big change and I’m so glad I did. It takes you about 25 minutes from start to finish. I’m sure you have sugar, cinnamon, flour and eggs in your pantry, so you just need 2 medium-sized apples and puff pastry. If you don’t want to glaze them it’s ok. Just sprinkle sugar over the egg wash before putting them in the oven. They are amazing as they come out of the oven.

The longest time you have to wait is to thaw the puff pastry, and the most time-consuming step is peeling the apples. Its easy! The house smells like apple pie, but you get a dessert that’s perfect to grab on the go. For the baking time, I went with 16 minutes and the hand-pies came out perfectly. The apples were cooked long enough to have still a bit of a bite to them with a sweet cinnamonny taste.

Easy Apple Hand-pies

Recipe by Live Well, Bake Often
Makes 8 servings

Ingredients, for the hand-pies:
2 medium apples, granny smith or honeycrisp
¼ cup of sugar
1 tablespoon of all-purpose flour
½ teaspoon of ground cinnamon
1 (1-lb.) package puff pastry, unthawed if frozen
1 egg white, lightly beaten
sanding sugar to sprinkle on top
Ingredients, for the Glaze:
1 cup of powdered sugar
1 teaspoon of vanilla extract
2 tablespoons of milk

Preparation:

  1. Peel and core the apples. Cut them in small pieces and add them to a medium-sized bowl.
  2. In a small bowl, mix together the sugar, flour and cinnamon. Add the sugar mix to the apples and mix until the apples are covered with the cinnamon sugar.
  3. Unroll the puff pastry or roll it out (on a lightly floured surface) so it’s about ¼-inch thick, and cut it into 8 squares. If rolling it out, do it so it retains a rectangular shape.
  4. Preheat oven to 400ºF. Line a large baking sheet with parchment paper or a silicon pad. Set aside.
  5. Add about ¼ cup of apples into one-half of each puff pastry square, fold the other half over, pinch the edges with your fingers to seal them and add a decorative edge with a fork. Brush each hand-pie with beaten egg white and sprinkle with sanding sugar.
  6. Bake at 400ºF for 15-18 minutes, or until lightly golden brown.
  7. Remove from the oven and transfer to a cooling rack to cool completely. Keep the parchment paper or silicon mat in the baking sheet. Don’t leave them in the baking sheet loner than 2 minutes, or they can stick to the parchment paper.
  8. After they have cooled down, make the vanilla glaze, In a small bowl sift the powdered sugar, then add the vanilla and milk. Mix with a small whisk until there are no lumps, and if you need to, add a bit more milk (in 1 teaspoon increments) to thin out the glaze.
  9. Place the glaze in a small piping bag. Place the cooling rack over the baking sheet with the parchment paper or mat, so the glaze drips on it.
  10. Decorate the hand-pies and serve.
