Caramelized Plantains

Many people confuse plantains with bananas, and even though they look a lot like green bananas and are a close relative, plantains are very different. They are starchy, not sweet, and they are used as a vegetable in many recipes, especially in Latin America and Africa.

Plantains are frequently used in Guatemala as a typical breakfast side dish. Sometimes they are just cut up in large chunks and boiled with cinnamon and sugar, other times they are fried in a little bit of oil, and dusted with sugar. Some like to fry green plantains, others, like me, prefer a very ripe one. For this recipe, I wanted to try something a bit different, so I added some orange juice, brown sugar and sesame seeds to caramelize them in butter. This can also be served over vanilla ice cream.

Caramelized Plantains

A Foodies’ Kitchen original recipe
Serves 3

Ingredients:
2 large ripe plantains, sliced
2 tablespoons butter
1 tablespoon oil
1 cup orange juice (fresh)
¼ cup brown sugar
¼ teaspoon cinnamon
1 teaspoon sesame seeds

Preparation:

  1. In a medium-sized skillet, melt the butter with the oil and as soon as it is bubbling add the sliced plantains, turn the heat to Medium-High.
  2. Let them cook for 3 min, and turn them over.
  3. Let them cook for another 3 min and remove the skillet from the heat.
  4. Add the orange juice, and stir. Return the skillet to the stove, and make sure you turn the heat to Low, add the sugar, cinnamon and sesame seeds. Stir just to combine, if you move the plantain around to much it will become mushy.
  5. Let the sugar caramelize with the rest of the ingredients, on low heat for about 8 min.

Serve immediately, and sprinkle with additional sesame seeds.
