Sesame Noodles

Remember those weekday meals I was telling you about? This Sesame Noodles recipe is another one I use.  It is one of my favorites (I only share my favorites with you), the raw vegetables add freshness and crunch, the sauce is incredibly flavorful and it all comes together in about 15-20 minutes. Love!

You can serve this by itself, but I do add sliced  browned chicken breasts on top to add even more protein to this dish,and you can also add carrots, soy sprouts and cucumber for additional veggies. For an extra appeal I recommend you sprinkle sesame seeds and a little chopped cilantro. I used spaghetti  (whole wheat), but you can definitely try it with rice noodles to give it a more Asian flair.  I did leave out the jalapeño because of my daughter, but if spice is not an issue by all means, use it!   When you mix all the ingredients in the blender, add one jalapeño pepper (seeded) and blend away.

I do have one recommendation. Use the supermarket peanut butter, you know which one. Don’t try the gourmet kid, or homemade ones. They just aren’t as creamy, and for this particular recipe the supermarket stuff is best.

Recipe from Everyday Food
Serves: 4

Ingredients:
1 pound pasta (spaghetti, or you can try rice noodles)
8 ounces snow peas, thinly sliced lengthwise
1 red bell pepper, cut into long, thin strips
½ cup smooth peanut butter
1 garlic cloves, smashed
1 jalapeño pepper (seeds removed if desired) (optional)
¼ cup soy sauce
¼ cup rice vinegar
⅓ cup warm water
2 tablespoons toasted sesame oil
coarse salt

Procedure:

  1. In a large pot of boiling salted water, cook pasta until al dente, according to package instructions. Drain, and rinse with cold water.
  2. In a large bowl, combine with snow peas and red pepper; set aside.
  3. In a blender, combine peanut butter, garlic, jalapeno (if using), soy sauce, rice vinegar, water, sesame oil, and ¼  teaspoon salt; puree until smooth.
  4. Pour over reserved pasta; toss to coat. Serve chilled or at room temperature.
