Chocolate French Toast

This year Valentine’s Day is on a Saturday, so what better way to say I love you than having breakfast in bed with your significant other? With breakfast in mind, I started looking around for something special and found a chocolate French toast recipe. Not this one. The one I found used a cocoa mix, but it inspired me to tweak this other recipe for what I consider is the perfect chocolate French toast.  I made my light version, using unsweetened cocoa powder and 12 packs of Stevia, instead of sugar. The result was a great semi-sweet chocolate taste. You can use brioche or your favorite bread, it even works well with regular sliced bread.

After making the French toast, comes the assembly. Spread Nutella, as much or as little as you like, lightly drizzle with maple syrup, and add a few berries to your plate, not only for decoration.  Adding berries makes it the perfect bite, and don’t forget the whipped cream!

Recipe adapted from All Recipes
Serves 4

Ingredients:1 cup milk4 eggs½ cup sugar (or 12 packets of Stevia)⅓ cup unsweetened cocoa powder¼ teaspoon salt
½ teaspoon cinnamon
1 teaspoon vanilla extract8 slices bread (pictured, Pan Cubano from San Martin Bakery)

Procedure:

  1. Beat together milk, eggs, sugar (or Stevia), cocoa powder, cinnamon, vanilla and salt.  Use a medium bowl to beat all the ingredients together.
  2. Heat a skillet over medium heat.
  3. Dip each slice of bread into egg mixture until well soaked, about 20 seconds per side.  Spray your hot pan with a little cooking spray, place the soaked bread slice in pan and cook for 2 minutes on the first side, and about 1 minute on the second side.
  4. Serving suggestion:  Spread each slice with a little bit of Nutella, add strawberries and blackberries, drizzle with maple syrup and decorate with some whipped cream.

I wish I’d found it before Valentine’s Day, but since I didn’t I will have to save it for a special occasion to make for my husband… maybe I will create a romantic weekend before the baby is born. :)
