Happy Hour: Piña Colada

We’re in the middle of the rainy season in Guatemala, so the days have been a little gray and gloomy. What better way to hold on to a little bit of Summer than making this Piña Colada recipe at home!  Just gather the ingredients and your favorite rum and blend them together. You can also swap the rum for vodka for this recipe.

Happy Hour: Piña Colada

When kids start growing up and start building friendships, we as parents, sometimes start to become friends with the children’s parents too. This is the case with Kristen and her best friend from school. When possible, they get together on a Friday afternoon at her house and somehow always end up playing outside in the rain, or they find a way to get soaked inside the house. Meanwhile, the moms make a batch of these sweet and creamy Piña Coladas. They will always remind me of those rainy playful afternoons!

Happy Hour: Piña Colada

There are a lot of recipes out there, some of them use evaporated milk, but we like this one that used condensed milk. Hey, you’re already indulging, so you might as well go all the way!

For decoration, you can either use pineapple wedges, or maraschino cherries, if you use them add a little bit of the juice to give your drink a touch of color.

Piña Colada

Recipe adapted from Food
Serves 2

Ingredients:
⅔ cup pineapple juice (unsweetened)
⅔ cup coconut milk
⅔ cup condensed milk
¾ cup diced pineapple
4-oz. dark rum
2 cups ice cubes
pineapple wedges for garnish

Procedure:

  1. Mix all the ingredients in a blender, and blend until smooth.
  2. Serve in a glass with a pineapple wedge as decoration.
