Deviled Dragon Eggs

We published a Dragon Eggs post in which we show you how to make these awesome looking eggs for Halloween! As a variation, or a grown up party, you can use them to make these Deviled Dragon Eggs. They are the perfect appetizer to include in your spooky Halloween spread.
All you need to do is scoop the yolks from your hardboiled eggs and mix in a few ingredients. To give it a more rustic look, we didn’t use a piping bag to scoop the yolk mixture back into the eggs, we just used two spoons to fill them.

Deviled Dragon Eggs

Yields: 12 appetizers
Ingredients:
6 hardboiled Dragon Eggs (or normal eggs)
¼ cup mayonnaise
1 teaspoon yellow or Dijon mustard
½ teaspoon Tabasco
Salt and pepper, to taste
Paprika, for sprinkling
Procedure:
- Cut your hardboiled eggs in half, lengthwise and scoop out the yolks.
- Mix all the ingredients with the yolks, and mash with a fork until smooth. You can use your food processor to make it extra smooth.
- Scoop the mixture back using two spoons and sprinkle with paprika.
