Chocolate Pumpkin Pie Spice Popcorn

With days getting chillier, and all the rain we’ve been having these past weeks keeping us from going out as much, we’ve been cozying up at home. Which means, watching TV and eating popcorn. I’ve been wanting to try to make flavored popcorn for a while, particularly sweet popcorn, and although  I still haven’t tried the first option that comes to mind: caramel popcorn, I tried this chocolate and pumpkin spice popcorn mix instead.

I got the idea to make this from a post I saw on Pinterest, which included cumin and cayenne pepper. I was sharing this with my daughter and I don’t think she would’ve liked that mix.  Instead I tried making it with pumpkin pie spice, and to help make it a little sweeter I added some confectioner’s sugar to the mix. The flavor mix between the semi sweet chocolate (which hardens as it cools) with the spices and the slightly salted popcorn was really good.  I really liked it, and will definitely make it again.  It’s an easy and original treat for family movie night. Don’t forget to use natural flavored popcorn, without butter.

Chunky Tomato Guacamole

Is it possible that we didn’t have any Guacamole recipes posted? We just couldn’t let this go on any longer. In a land that grows avocados wildly, it would be unthinkable we wouldn’t share our favorite recipe. We prepared this as an appetizer for a gathering with our friends a few weeks ago. We wanted something that would keep their stomachs busy while we prepared the main dish: Jambalaya!

The best part of this was that, as usual, we always end up hanging out in the kitchen. And since we were in a big big kitchen, we were able to hang out all while preparing the Jambalaya. Now, back to the Guacamole. We prepared it a good couple of hours before the dinner, so, the flavors would blend in perfectly with each other. Nothing better than a chunky guacamole to open the appetite!

Bloomin’ Onion Bread

Got friends coming over? Try this bloomin’ onion bread.   You’ll prepare it in a flash and your friends will love it.  It’s better if you use sourdough bread to really get the “blooming” effect.  We don’t have sourdough bread available at the bakery in Guatemala, so I used a country style round bread, and it worked just fine.  I used a small serrated knife to help me cut the bread when I had to do the second part. I think I would have made a tragic mess out of that loaf if I had used the regular bread knife.

If you’re having more than 4 friends over, make at least 2!  Trust me, they will be gone quicker than you think.

This recipe can be the base for you to use your creativity and add different ingredients such as, cheddar cheese and bacon instead of  just mozzarella and onions.  How about individual portions using small round breads?  I’ll be experimenting with these ideas over the holidays, I have a ton of family get togethers coming up.  (yikes)
