No-Bake Cereal Bars with Nuts

Cereal bars are a great option for an after-school snack, or a mid-morning snack for us adults! These are all-natural and are no-bake, so it only takes a couple of minutes to put them together.

You could mix the honey and peanut butter by simply adding them into your cereal mix, but it will be much easier to incorporate if you heat them up first. It only takes a moment. Make sure you use bee honey and not maple syrup since it is much runnier and your bars won’t hold their shape.

No-Bake Cereal Bars with Nuts

We used creamy peanut butter from the store to make our bars. It has a nice creamy texture which also helps our bars hold their shape. We recommend that you use unsweetened cereal, such as regular Cheerios or other oat cereal that doesn’t have any honey flavoring added to it. This will make the bars too sweet.  Puffed rice cereal would also work wonderfully!

We added Nau Baked Nuts with Raisins and Yogurt drops because they are the perfect addition to this mix. These lasted one day at our house! We are sure your family will love them too. Keep them in the fridge in an airtight container. This keeps the peanut butter and honey firm to they keep their shape well.

No-Bake Bars with Cereal and Nuts

Adapted from Yummy Toddler Food

Ingredients:
3 cups unsweetened oat-based cereal
1 cup Naú’s Baked Nut Mix with Raisins and Yogurt
½ cup natural creamy peanut butter (or other nut butter)
1/3 cup honey
1 teaspoon vanilla
¼ teaspoon salt

Instructions:

  1. Line a square baking dish with parchment paper.
  2. Place cereal, and nuts in a large bowl. Toss to combine.
  3. In a small saucepan, heat peanut butter and honey over low-medium heat, stirring frequently until the mixture is completely smooth. Remove from heat, and stir in vanilla and salt.
  4. Pour over the cereal mixture and gently toss to coat everything.
  5. Pour into lined pan and press mixture down firmly with a spatula or your hands.
  6. Place bars in the freezer for about 30 minutes to firm up. Remove from freezer, cut into bars or squares and serve.
  7. Store leftover bars in a sealed container in the refrigerator. They should last about 1 week.
