Cauliflower Alfredo Sauce

Sometimes you want to eat something comforting, like a creamy and cheesy Alfredo sauce.  You can go ahead and indulge with this recipe, because the great thing about it is there is no cream in it, which saves a lot of calories and fat.  Instead of cream we used pureed cauliflower, which is an ingredient used in a lot of paleo recipes nowadays because it is such a versatile vegetable that has the added benefit of being packed with nutrients, antioxidants and provides health benefits such as detoxification support for the body, it boosts brain health and aids in digestion .  This is not a paleo recipe, but it’s definitely a healthier version of this iconic sauce with a silky, creamy and delicious taste.  You can use either whole grain or regular pasta.  I’ve made it with both, paired with a green salad with pears, nuts and balsamic vinegar.   We hope you try it, and let us know what you think!

Cauliflower Rice & Vegetable Stir-Fry

Trying to keep away from carbs? You’ll love this recipe!  It’s not really rice, it’s cauliflower that has been through the food processor before getting cooked.  I wouldn’t use it as a rice substitute in recipes such as stews or casseroles, but it’s definitely a good alternative to use as a side dish or a vegetarian meal in place of grains.  I’ve tried cauliflower in many ways, I have made it into soup, I have pureed it and roasted it; but this new cooking method has had good reviews at home, so you should try it too!  Especially if you’re into the paleo diet.

Cauliflower Hash with Fried Egg

Hi guys, I’m back!  I took a much needed vacation with my hubby and am now ready to tackle the holidays.  I had this post in my drafts folder, which I wanted to share with you before I left… but you know how it is with all the organizing and packing. I made this Cauliflower Hash as a side dish a few weeks ago, and I think it’s an excellent choice for a weekend brunch or to pair with some soup for a cozy dinner.

Hash is essentially a mixture of diced potatoes, vegetables, spices and sometimes meats.  It’s primarily a breakfast food, you can dice up anything you can think of such as a mixture of potatoes and sweet potatoes mixed with some bacon and onions.  This particular version includes cauliflower, which makes it a very tasty way to sneak in some vegetables.  The original recipe has some spinach in there, so feel free to add some after step 4.   Just add it to the pan, and move it around for a few minutes until they it’s wilted.  You can also add some chopped bell pepper, which I think would make an excellent addition.
