Baked Brie with Sun Dried Tomatoes

Now that October is gone, the end-of-year celebrations are officially starting! This is the time when friends come to visit, you have family over for dinner and make some great memories. With a handful of ingredients, you get an impressive looking and delicious appetizer. You just have to pick up your favorite brie, sun-dried tomatoes and  some parsley.  If you are not a fan of parsley, fresh basil is a great and delicious substitute.

Baked Brie with Sun Dried Tomatoes

Brie is delicious, and here are a few fun facts about it:

  • It’s a soft cow’s milk cheese, that has an edible white, flowery rind.
  • With a light, and buttery scent, its flavor has a salty finish.
  • As it’s a mild cheese, its extremely versatile. You can serve it with strong flavors like tangy fruit sweet preserves or acidic tomato toppings, like this recipe.
  • If you happen to have some brie left after serving, you can cover it completely in plastic wrap. This is to protect its creamy interior. When serving again, just remove the plastic wrap and heat again until it’s melted and has heated through completely.

You can serve this cheese with regular crackers, but we love using toasted baguette slices. Also, serve this with black olives to compliment the platter. We found a great heat resistant round glass container, that is perfect for baking the brie in the oven. then we also got a great wooden serving platter with 3 ceramic bowls from Symphony. Baked Brie with Sun Dried Tomatoes

Baked Brie with Sun Dried Tomatoes

Recipe adapted from Taste and Tell
Yield: 8 servings

Ingredients:
4-oz. sun-dried tomatoes
1 clove of garlic, minced
1 12-oz. wheel brie cheese
1-2 tablespoons chopped parsley
baguette toasts, for serving

Preparation:

  1. Preheat the oven to 350ºF. Prepare your baking dish or baking sheet with parchment paper and set aside.
  2. Chop the sun-dried tomatoes and combine them in a bowl with the minced garlic, adding some of the oil from the tomatoes.
  3. Place the wheel of brie on your prepared dish, and place the sun-dried tomatoes on top of the cheese.
  4. Bake until the cheese is soft and starts to ooze out the sides, about 10 to 15 minutes.
  5. Sprinkle on the parsley before serving with baguette toasts.
