Spicy Apple Upside Down Puff Pastry

As you already guessed from the previous post, we loved this technique so much, we decided to try a sweet version with a twist: apple with spicy honey. These apple pastries can be served over tea or coffee. We’re using our last tip, to double bake so the tops and bottoms are golden brown. As this version has sprinkled sugar and brown sugar, the tops will later become the sweet and crunchy base of the pastries.

As we did on our previous recipe, make sure that after the first bake and they are golden, remove them from the oven, let them rest for about 5 minutes to set, then flip them over and bake again for an additional 10 minutes. By adding spiced honey and a touch of thyme, these pastries are perfection for an afternoon tea!

Spicy Apple Upside Down Puff Pastry

Yields 6 pies
Adapted from Live, Eat, Learn

Ingredients:
1 sheet of puff pastry
6 teaspoons spiced honey
fresh thyme
salt and pepper, to taste
1 medium fuji apple, cored and sliced
1 egg
1 teaspoon cream
brown sugar
cinnamon

Directions:

  1. If your puff pastry is frozen, thaw it in the fridge. When ready to bake, move it to the counter and let it come to room temperature. If the puff pastry comes in a block (like ours did), roll it out, and cut into 6 equal rectangles.
  2. Preheat your oven to 400°F. Line a large baking sheet with parchment paper. Drizzle honey equally around the baking sheet to make 6 puddles.
  3. Slice the apple and remove thyme leaves from stems. Top each honey puddle with an apple slice, and top with thyme leaves.
  4. Cover each mound with the puff pastry, pressing the edges down to completely cover the apple. Whisk the egg together with the cream, and brush it over the pastry. Sprinkle brown sugar and cinnamon on each pastry.
  5. Bake from 15 to 20 minutes, until golden brown and cooked through. Let cool on the baking sheet for a few minutes, before turning it upside down. Bake for an additional 10 minutes.
  6. Let cool for a few minutes before moving over to the serving platter. Serve immediately.
