Taco Rice Bowl

This recipe is not only delicious, but ideal for a family lunch. Each person can add the toppings they want to their rice bowl! And, aside from being full of flavor we love that it is a healthy dish.

Our version is made with brown rice, so the amount of liquid and rice is appropriate for this type of rice, specifically the brand we use at home. See your package’s instructions when cooking your rice, some brands may require 3 cups of liquid per 1 cup of rice, others 2 ½ cups of liquid per cup of rice… and the cooking time is 60 minutes. If you prefer, you can use white rice, just make sure you modify the liquid quantities to 2 cups of liquid per 1 cup of rice, and the cooking time would be cut to 20-25 minutes.

We recommend you use lean ground beef. You can also use ground chicken, or mix half ground pork meat with half ground beef. This is a very versatile recipe that allows you to accommodate yours and your family’s preferences.

Taco Rice Bowl

Taco Rice Bowl

Serves 4
Recipe adapted from Together As Family

Ingredients, for the rice:
1 cup brown rice
2 ½ cups chicken broth
juice and zest of 1 large lime
¼ cup chopped cilantro
½ teaspoon salt
½ teaspoon cumin

Ingredients, for the meat:
1  lb lean ground beef
1 teaspoon salt
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon brown sugar
¼ teaspoon pepper
1 8-oz. can tomato sauce
1 red bell pepper, diced
1 can red beans

Ingredients, toppings:
corn chips
shredded lettuce
shredded cheese
chopped tomatoes
pico de gallo
guacamole
sour cream

Procedure:

  1. For the cilantro lime rice:  Bring chicken broth to a boil, add the rest of the ingredients. Add the brown rice, and let it boil for 1 minute, uncovered. Cover the pot, set the temperature to low, and cook for 60 minutes or until rice is done. Fluff with a fork.
  2. For the meat: Cook and crumble the ground beef in a skillet pan over medium-high heat until no longer pink.  Add the spices,  tomato sauce, green bell pepper, and red beans. Stir to combine. Turn heat to medium-low and let simmer while the rice cooks.
  3. Layer rice in a bowl, top with the meat mixture, and then add with your choice of toppings.
