Sometime’s thinking about what to make is time-consuming, or maybe you are tired of rotating the same menus over and over. These are all fast, easy and healthy recipes which I use on my cooking day – which is Monday.
On Monday I cook 3-4 meals, that usually last through the week, so on my very busy weekday schedule the food is already prepared and I just heat and serve. I need to do this, so I can better organize my work week. Most of these recipes require one pot, pan, or baking dish. I am not only interested in fast and healthy recipes, but also keeping dirty dishes to a minimum. What I also like about all these recipes, is that you can pair them with simple white or brown rice, cooked noodles, or a quick salad and your meal is complete. If whatever I cook on Monday isn’t enough to get me through the week, I rely on salads. On Wednesday, I quickly marinate and brown a couple of chicken breasts, and make a salad using shredded chicken, avocado, maybe some sliced apples or tangerines, some nuts, cubed cheese… you name it, it’s in there. Balsamic vinegar is always a good choice.
