Breakfast BLT with Cilantro Mayo

The last recipe from Cemaco’s Kitchen and Table Catalog, is a breakfast winner. Who says you have to go out for a proper egg english muffin? With this amazing Hamilton Beach breakfast maker this is a breeze. We have to be honest, at first we thought it was not going to work that well, but it does work! We sprayed the surface with a bit of cooking spray to make the eggs slip out much easier, and it worked like a charm.

We seem to have an undying love with BLTs, and this recipe proves it. We wanted to create a breakfast muffin that would not only keep you charged and satisfied throughout the morning, but also one that would have some twist to it. There, came in the Cilantro Mayo. To prepare it, we roughly chopped the cilantro and mixed it with the mayo in a small food processor. If you don’t have a small food processor, it’s ok. You can finely chop the cilantro and mix it by hand with the mayo.

To build the BLT, spread mayo on the muffin base, place the lettuce, bacon, tomato, avocado, and adding the egg on top! Close with the other half of the muffin with a little mayo as well. Waffle Express Duo: BLT + Ice Cream Sandwich

At The Foodies’ Kitchen we are developing recipes for specific product brands to give you creative ideas for products you might find on your supermarket shelves or frozen food section, such as Waffle Express waffles, a local business that makes delicious Belgian waffles.

Waffle Express frozen waffles are made with natural ingredients and are available in original or gluten-free varieties. Whole grain, orange and poppy-seed flavors are also available upon request. You can find them served at Club Alemán, zone 15 or at the frozen food section of select stores:

These waffles are already baked, just pop them in the oven or toaster for an easy breakfast. You can serve them with maple syrup, honey or fruit. Or you can take a more adventurous and sweet road and serve them with banana and Nutella. But, what if you could do so much more with them? Like a quick dinner. Or a snack. See, the beauty of these waffles is that you can create many different dishes with them. This was our inspiration for this Waffle Express Duo: a BLT with Cheddar Cheese, and an Ice Cream Sandwich. French Toast BLT

When we think about french toast, we immediately imagine maple syrup, cinnamon, berries…. breakfast and coffee, right? But what if there could be a savory version of french toast? Sometimes I think about those things, and I start googling and pinteresting to see what’s out there. I found a lot of BLT french toast photographs to inspire me. Basically, you use the same base as you would to make normal french toast, buy instead of adding sugar you add salt, spices and herbs to the mix. As I write this, I’m thinking about adding a little white wine to the mix, and top my savory french toast with sautéed mushrooms and caramelized onions? A little swiss cheese maybe? I’ll definitely try that and post the recipe.

My recommendation when trying this recipe, is that you can try to get a crusty bread.  Even though I made mine with whole wheat sliced bread, it would have turned out even better if I would have used a rustic type of bread, or even baguette sliced diagonally.
