Little Foodies: Ice Cream & Pineapple Chocolate Dessert

This is an easy dessert that kids can prepare at home. It’s basically pineapple slices covered with semi-sweet chocolate. And with this base you can make different variations of this dessert. One option is to cut the slices really thick, and then insert a wooden stick into the fruit, to later cover them with chocolate and serve them as pops.

Another option, what we’re sharing today, is more elaborate but still easy. You need a pound cake, preferably vanilla. You slice a thin piece, then place the prepared pineapple covered in chocolate on top, and crown it with a small scoop of vanilla ice cream.

An important tip: when melting the chocolate in the microwave, it’s really important to make it in shot time intervals. You start off with 30 seconds, then stir it as much as you can. Then, do it again with 15 second intervals until the chocolate has melted. If we want the chocolate a but more runny, you can add a bit of coconut oil, but never add water or any other liquid or it will clump up.

At Almacenes Siman, we found a hermetic glass containers, perfect to melt the chocolate in. And what we loved about it, is that after the extra chocolate cooled off, we just closed it with its lid and placed it in the fridge. We also found a small whisk (perfect for Kristen) to mix the chocolate and a set of kitchen towels to keep everything clean.

Ice Cream & Pineapple Chocolate Dessert

Recipe adapted from The Beach House Kitchen
Serves 4-6

Ingredients:
1 fresh pineapple peeled and cored
12 oz.of semi-sweet chocolate chips
1 cup coconut flakes
1 pound cake, sliced
vanilla ice cream

Procedure:

  1. Line a large baking sheet or large plate with parchment paper and set aside.
  2. Slice pineapple into ½-inch circles, and if you want to you can slice those circles in half as we did.
  3. Place the chocolate chips in a microwave-safe bowl, and heat at half-power for 30 seconds. Stir thoroughly. Continue to microwave in 15 second intervals and stir until smooth.
  4. Dip pineapple slices in melted chocolate, coating halfway and place on prepared tray or plate.
  5. Sprinkle with coconut flakes and let the fruit sit until the chocolate hardens.
  6. To serve, place a slice of pound cake followed by a chocolate covered slice of pineapple and a vanilla ice cream scoop on top.
