Jell-O Spritz Cookies
I wanted to try a new recipe for cookies to give away on Valentine’s day, as I searched for ideas I kept bumping into recipes that had powdered gelatin in them. I wondered if I could make spritz cookies, using my cookie press, with a recipe that had gelatin in it? I found this one, and even though the recipe is great as it is, if you don’t want such a PINK! cookie, you can use a 1 ounce package of gelatin instead of 3 ounces, like I did. I suppose that would tone down the color, although I haven’t tried it using just 1 ounce. Also, I tried this recipe with a strawberry flavored gelatin, next time I’ll give cherry or raspberry flavors a try… Although cherry would probably come out an even brighter pink, and raspberry has more of a wine colored hue.
Don’t be afraid to try them, they are not too sweet, despite their color. I have already given them to some of my friends and family and they have loved them, and I can tell they weren’t just being nice because they did eat a few! I had to re-stock my plate.
But don’t take my word for it, the recipe from the source itself has had great reviews, which is what gave me the confidence to bake them.
These are especially appropriate for any celebration involving kids, or a theme party. My toddler can’t get enough of them, probably because they smell and kind of taste like strawberry cereal.
Jell-O Spritz Cookies
Recipe adapted from All Recipes
Yields: Approx 180 heart shaped spritz cookies (We’re not kidding)
Ingredients
3 1/2 cups all-purpose flour
1 1/2 cups butter
1 (3 ounce) package fruit flavored gelatin mix
1 teaspoon baking powder
1 cup white sugar
1 egg
1 teaspoon vanilla extract
Procedure:
- Cream butter, sugar and gelatin.
- Add egg and vanilla. Beat well.
- Gradually add flour and baking powder. Blend until smooth.
- Fill your cookie press tube with the dough, and use the heart disk to form your cookies.
- Bake at 350º for 11 minutes
