Elotes Locos are a traditional food that you can find nation wide in fairs and street carts. It’s really easy to prepare at home with a few ingredients and the flavor combo is to die for. For this recipe we used a white type of corn, but you can use the regular yellow sweet corn, and if you’re going to make some juicy steaks on the grill…. grilling the corn to make this recipe for Elotes Locos will make them even more amazing!
The mustard that you’re using, is the common yellow kind (no fancy mustard here!), and locally we would use Queso Seco, a powdered strong and salty cheese. Really, there are no specific quantities for this recipe… you use the ingredients in enough amount to cover the whole corn.

chili powder (optional)
- In a medium size pot, put enough water to boil (with salt), making sure that they cover the corn. Add the whole corn and cook until tender (between 10 to 15 minutes).
- When they are done, leave them to cool a bit, then insert a wooden stick on both ends.
- Cover the corn with mayo, then ketchup, and finally with mustard. Sprinkle enough queso seco and a bit of chili powder.
