Baked Fish Tacos

A quick version of a taco meal, this comes together in a few minutes and a handful of ingredients. You can choose between Tilapia or Cod, any fish from the flaky variety.

Fish Tacos

This is an easy recipe that you can fix according to your taste and whatever you have in the fridge. In this case, we used bell peppers, spring onions and tilapia. For seasoning, we used a Fajita Seasoning we love – and served the tacos with a bit extra of lime juice and cilantro.

Baked Fish Tacos

A Foodies’ Kitchen original recipe
Yields: 4 servings

Ingredients:
2 pounds tilapia fillets
1 tablespoon olive oil
1 lime
2 bell peppers
3 spring onions
Mondu Fajita Seasoning
12 corn tortillas
Toppings: cabbage, sliced jalapeño, avocado, lime and cilantro

Directions:

  1. Preheat oven to 375ºF. Line a baking sheet with aluminum foil.
  2. Cut the bell peppers in strips, and the spring onions in quarters. Place on the baking sheet.
  3. Rinse and pat dry thawed tilapia fillets. Place fillets on the baking sheet. Brush the top of each fillet with olive oil. Season with seasoning blend, salt, and squeeze lime juice over the top of the fillets.
  4. Bake for 15 to 20 minutes, or until fish is opaque and flakes easily with a fork (test in the middle of your thickest piece).
  5. While fish is baking, prepare toppings and heat tortillas on the stove.
  6. To assemble tacos, place desired amount of fish and veggies, broken up slightly, lengthwise in the middle of your tortilla. Top fish with desired toppings and serve.
