Vegetable Beef Stir Fry

Stir frying is one of my favorite weekday cooking methods for many reasons, it helps you use up leftover vegetables from the fridge, you can add as many or as little as you want, and you only use one pan to make your meal which is great for clean up.

This stir fry combines some of my family’s favorite ingredients: Beef and broccoli. Thankfully, my daughter loves broccoli, but I have a hard time getting her to eat a lot of other vegetables. I am able to sneak in some carrots in this dish, by adding a squeeze of lime juice at the end on her plate.  That’s been my secret for getting her to eat a wider variety of vegetables. Now she’s even into beets….who knew.

You can prepare your vegetables in advance, and have them ready in a tupper in the fridge, so you can make this dish in under 15 minutes when you are in a hurry and you can serve it over rice, or pasta.  I do recommend you use fresh ginger in this recipe, it really does make a difference and gives this dish a special flavor.

Vegetable Beef Stir Fry

Recipe adapted from My Recipes
Serves 4

Ingredients:
1 pound boneless sirloin steak
1 cup beef or chicken broth
¼ cup low-sodium soy sauce
1 tablespoon cornstarch
2 teaspoons dark sesame oil, divided
1 tablespoon minced peeled fresh ginger
2 garlic cloves, minced
4 cups broccoli florets
1 small bunch of scallions, sliced
1  thinly sliced carrot
Procedure:
  1. Trim fat from steak. Cut beef diagonally across grain into thin slices.
  2. Combine broth, soy sauce, and cornstarch in a small bowl; stir with a whisk until blended. Set aside.
  3. Heat 1 teaspoon oil in a large non-stick skillet or wok over medium-high heat.
  4. Add ginger and garlic; stir-fry until fragrant. Don’t let the garlic burn!  Add beef; stir-fry 5 minutes. Remove mixture from pan; keep warm.
  5. Add remaining 1 teaspoon oil; add broccoli, scallions, and carrot. Sauté 7 minutes or until vegetables are crisp-tender.You can sprinkle with a small amount of salt at this point.
  6. Return beef mixture to pan, and stir in cornstarch mixture; sauté 2 minutes or until thick and bubbly. Serve over rice.
