Little Foodies: Birthday Pancake Stack

Have a birthday coming up? These pancakes are an easy recipe to serve as a surprise birthday breakfast, specially if you have kids.

For the pancake recipe, we’re sharing the one we’ve been using for years – tweaked to perfection to make the best homemade pancakes. Sure, you can also use pancake mix to make your life easier, we won’t tell, the only thing that you have to add is the sprinkles at the end. We recommend using sprinkles like the ones you see in our pictures, so they don’t stain the batter when mixed.

For the sauce, we chose a cream cheese based sauce, so its white and pops the sprinkles and make our pancake stack more festive. Its a mix of cream cheese, milk and confectioner’s sugar.  To make a slight flavor variation, you can add maple syrup instead of sugar – we’ve tried it and it also tastes great.

Our photo shoot was at Almacenes Siman‘s Playground, and we got a 3-piece Aluminum Non-Stick Skillet Set from the Pioneer Woman. We also used a set of mugs that are perfect to serve milk or juice, and lastly a set of pastel color plates that you can combine with a colorful set of placemats to make it festive.

Birthday Pancake Stack

 Recipe from The Foodies’ Kitchen
Yields approx. 6 pancakes

Ingredients, for the pancakes:
1 egg
1 cup all-purpose flour
¾ cup milk
2 tablespoons melted butter
2 tablespoons sugar
3 teaspoons baking powder
Pinch of salt
1 teaspoon vanilla extract
¼ cup of sprinkles

Ingredients, for the cream cheese syrup:
4-oz. cream cheese
¼ cup milk
2 tablespoons icing sugar

 

Procedure:

  1. In one bowl, mix flour, baking powder, salt and sugar.
  2. In a separate bowl, mix egg, milk, melted butter and vanilla extract.
  3. Make a hole in the middle of dry ingredients and pour wet ingredients into it. Whisk wet and dry ingredients until combined. Do not over mix the batter. It can have some lumps remaining.
  4. Set the batter aside to rest for 5 minutes before cooking. Add the sprinkles, folding them in.
  5. Heat the frying pan over the medium-high heat and brush it with few drops of oil or butter (you can use paper towel f you decide to use oil). When the frying pan is hot, lower the heat a little below medium, and pour about ¼ cup of the batter onto the frying pan
  6. Cook pancakes on one side for about 2-3 minutes or until golden brown.
  7. Flip pancakes using the spatula and cook again for about 1-2 minutes or until golden brown.
  8. To make the Cream Cheese syrup, beat together the cream cheese, milk and sugar until it is well combined.
  9. Stack pancakes and drizzle with the syrup, add sprinkles and decorate with whipped cream. Don’t forget the candle!
