Chocolate Caramel Apples

Halloween might be over, but we can still enjoy fall treats like these caramel apples. They are different from others we have done before in that it has added chocolate to the ingredients used to make the caramel, which gives it a nice twist.

There are a few tips and tricks to ensuring success with a caramel recipe. For this caramel recipe, you don’t have to worry too much about crystallization, since we are adding corn syrup right from the start.  Mix everything well before setting your pot over the heat, and let is come to a boil, moving from time to time.

As for the apples, sometimes you might find that the caramel doesn’t stick to the apples because of the wax they are sprayed with. You can soak them in hot water for 20 seconds and wash off the wax. You might find that the color of the apple will look less vivid, but that’s ok. It’ll get covered with caramel!

This caramel is soft and chewy and a great fall treat. You can dip the entire apple, for which we recommend small varieties. You can also dip the bottom of the apples in chopped candy, sprinkles or nuts. Or, you can dip individual slices of apples for a smaller more bite sized treat.

Chocolate Caramel Apples

Recipe adapted from Martha Stewart
Yields: 5 medium apples or 10 lady apples

Ingredients:
10 lady apples or 5 medium apples
Non-stick cooking spray
1 ½ cups sugar
½ cup light corn syrup
½ cup heavy cream, room temperature
3 ounces best-quality semi-sweet chocolate, finely chopped

Procedure:

  1. Insert a 5-inch-long nontoxic twig or wooden dowel into the top of each apple. Prepare an ice-water bath. Coat a rimmed baking sheet with non-stick cooking spray.
  2. Combine sugar and corn syrup in a heavy saucepan. Cook over medium-high heat, stirring occasionally with a wooden spoon, until dark golden (about 12 minutes after mixture comes to a boil). Slowly pour in heavy cream in a steady stream, stirring vigorously to combine. Remove from heat. Stir in chocolate until completely melted.
  3. Briefly plunge saucepan into the ice-water bath to stop the cooking. Dip one apple at a time into the caramel, and use a spoon to coat the top and sides. Transfer to prepared baking sheet until set.
