Breakfast Sandwiches

On Sundays, where you want to soak in as much of the slow-paced we all love, this is a great breakfast, either to enjoy at home or even taking them to-go instead of stopping at a fast-food restaurant.

Breakfast Sandwiches

This is a very easy meal, specially when using some handy tools we got at Almacenes Siman. More on that in a few. What you need to know are your main ingredients:

  • Bagels, English muffins or croissants (extra points if you get parmesan topped croissants)
  • Eggs
  • Mozzarella
  • Bacon
  • Tomato

Breakfast Sandwiches

You can improve on this recipe by adding a guacamole, dehydrated tomatoes in olive oil, roasted bell peppers, a chunky tomato sauce or even some hollandaise sauce. It all depends on your preference.

For our recipe, we opted for the classic ingredient list above, and a few little things (a bit of chives, salt and pepper on top of the eggs), and a warm pastry. This is a filling breakfast, so it’s perfect for a late brunch style Sunday meal. Serve it with a classic black coffee or orange juice.

At Almacenes Siman we found three items that made this task so much easier… specially making perfectly round fried sunny-side-up eggs. First, a set of a bacon press (key to making flat and crisp bacon) and comes with a set of two rings that can with a help with a small bowl, you can make the  perfectly round fried eggs – and an extra note, you can also use them to shape small pancakes. Second, a handy silicone spatula and third, a small cast iron pan, where you can make your eggs (or egg, as you can see on one of the pictures bellow, as we had an unexpected guest for Sunday brunch).

Breakfast Sandwiches

A Foodies’ Kitchen original recipe
Yields 2 servings

Ingredients:
2 eggs
2 bagel, croissant or english muffins
1 roma tomato
bacon
chives
lettuce
2 slices of mozzarella cheese
Salt and pepper to taste

Preparation:

  1. Cut the bacon pieces as long as the bacon press. Heat your griddle or skillet, and place the bacon with the press on top. Check the bacon after 30-35 seconds to turn the bacon and cook it evenly on both sides. When its cooked, transfer to a dish with a paper towel to get the excess grease.
  2. Preheat your oven at 325ºC, and toast your pastries, cut side down on a cooking sheet. If you rather not use the oven, you can use your toaster for if using only bagels.
  3. While the pastries are heating, slice the tomato and slice the chives.
  4. In a small bowl, crack the egg and add a few of the sliced chives, and season with salt and pepper.
  5. Heat your cast iron skillet or griddle, until and spray it along the cooking rings with cooking spray. Place the rings in the skillet and slowly add the egg white so it starts cooking as soon as it touches the pan, then immediately after, add the rest of egg.
  6. Cook for about 30 seconds, and if you want, you can stir the egg yolk to cook it. Top with cheese for it to melt.
  7. Have your pastry ready: lettuce, egg and cheese, bacon, tomato, and close the sandwich with its top. Serve immediately!
