Spring Tuna Patties

It’s been almost 10 years since we started testing recipes and sharing the results with all of you. Some of the recipes we’ve done before are either family favorites or recipes that we’ve incorporated into our weekly cooking. And this recipe is one of those. For those following along from way back, the original recipe for Tuna Patties was posted by Helga eight years ago. This is a quick recipe, takes no time to make and you can tweak it as much as you like.

Spring Tuna Patties

Since I’ve moved, I’ve been good at having plenty of vegetables in my meals, as well as cooking as much as I can so I don’t buy take out. Still bringing lunch to the office most days and cooking in at night. For the last couple of months, we’ve been going through our entire site mostly tweaking recipes… and for me, let’s say I think of this as my recipe binder!

I went to this recipe because it’s one of those reliable recipes that always come out good. Somehow, we found a way to make it better. By adding a few veggies such as celery, red onion, and bell pepper, and adding a bit of sesame seed oil, the flavor profile is so different from the original recipe that we know you’ll love this recipe twist.

Spring Tuna Patties

Spring Tuna Patties

Recipe adapted from The Foodies’ Kitchen
Yields: 8 medium-size patties

Ingredients:
2 6-oz. cans tuna in water
½ cup of diced celery
½ cup of diced red onion
½ cup of diced bell pepper
2 teaspoons dijon mustard
1 tablespoon lemon juice
1 tablespoon tuna water
1 tablespoon of olive oil
1 teaspoon of sesame seeds
1 tablespoon of sesame seed oil
salt and pepper to taste
½ cup bread crumbs
1 egg

Instructions:

  1. Drain the liquid from the tuna cans, saving 1 tablespoon.
  2. In a medium bowl, add the tuna, celery, red onion, bell pepper, mustard, lemon juice, tuna water, sesame seeds, olive and sesame oils. Mix well and season with salt and pepper. Taste and adjust seasoning as needed.
  3. Add in the bread crumbs, and mix to combine.
  4. In a small bowl, whisk the egg. Add to the tuna and mix to combine.
  5. Using a large cooking scoop, portion the mix into balls. With each part, form into a ball and then flatten into a patty.
  6. Place each pattie over wax-paper square and in a dish that you can cover. Chill for at least an hour, or overnight – this will help the patties to keep their shape when cooking them.
  7. Heat a large skillet on medium-high, and add a bit of butter or oil. Gently place the patties in the pan, and cook until nicely browned, 3-4 minutes on each side.
