Buttermilk Pancakes

Since March 16th our country has been in lockdown due to Covid-19, so we decided to upload our quarantine recipes to help inspire and give fresh ideas to our followers. We are going to be cooking a lot more at home, and ideas will run out fast.  We are here to help! We have been sharing our recipes on Instagram Stories (then saved on highlights per recipe) and now we are posting them here so you can easily find them.

These buttermilk pancakes are one of the recipes we use on Sundays to make breakfast. To make the buttermilk, which in Guatemala is not available in the supermarket, remember that you can do it by mixing 1 cup of whole milk (at room temperature) with 1 tablespoon of white vinegar or 1 tablespoon of lemon juice. Let it rest for 10 minutes and you will see how it thickens.

Recipe from Delish
Makes 10 pancakes

Ingredients:
1 ½ cups all-purpose flour
2 tablespoons sugar
1 teaspoon coarse salt
3 teaspoons baking powder
1 large egg, lightly beaten
1 ¼ cups buttermilk
3 tablespoons unsalted butter, melted
1 teaspoon vanilla extract

Procedure:

  1. In a large bowl, whisk together the flour, sugar, salt, and baking powder. Make a well in the center of the flour mixture. Add in the egg, milk, vanilla, and 3 tsp of melted butter. Whisk from the center, slowly incorporating the flour. Rest the batter for 10 minutes.
  2. Heat a pan over medium-high heat. Grease with butter or cooking spray and pour in ¼ to 1/3 cut of batter for each pancake. When bubbles rise to the surface, flip the pancakes, slightly reduce the heat, and cook until the bottoms are golden and the centers are cooked about 1 minute. Enjoy!
