Happy Hour: Moёt & Chandon Rosé Impérial Food Pairings: Watermelon & Feta Salad

Moёt & Chandon has been one of the most prestigious champagne brands and symbolizes glamour, success, and celebration since the 1700s. For a sparkling wine to be called champagne, it must originate from the Champagne region, in France. Other regions have their specialties, such as Cava from Spain, or Prosecco from Italy, these are also sparkling wines.

Sparkling wines pair with practically any type of food, and among the variations, we can find Brut (dry with citrus notes), Dry or Extra Dry(dry, fruity) Demi Sec (fruity and sweet), all should be served very cold between 8-10C, and depending on the type of sparkling wine, you can combine them with different food types: for example a demi-sec pairs wonderfully with desserts, or a dry one with meals that are a bit fatty or cheesy.

This month we bring you a pairing for Moёt & Chandon Rosé Impérial, a sparkling Brut with notes of red fruits such as strawberry, raspberry, roses, and pepper. This is a great option for a special occasion, and as the name implies it has a beautiful pink color.

Here are a few options of how to combine this champagne, to really complement its notes:

  • Grilled red meats, or beef carpaccio.
  • Black olives
  • Seafood: salmon, mussels, oysters.
  • Dressings with balsamic vinegar
  • Fresh green herbs
  • Red fruits: strawberries, raspberries, cherries
  • Cheese: goat, or feta
  • Bitter ingredients

Although one could probably think otherwise, this sparkling wine is not recommended to combine with desserts. Neither with highly spicy or dairy-based foods.

Watermelon & Feta Salad

Serves: 4
Recipe from The Foodies’ Kitchen

Ingredients:
2 tbs extra-virgin olive oil
½ teaspoon salt
3 c. cubed seedless watermelon
3 Roma tomatoes, quartered
crumbled feta, to taste
freshly grated black pepper, to taste
 red onion, thinly sliced, to taste
 mint, to taste
arugula, to taste
balsamic glaze

Preparation:

  1. In a large bowl, combine the watermelon, Roma tomatoes, cherry tomatoes, onion, mint, and arugula leaves. Add the salt, olive oil, and black pepper, combining carefully so that everything is incorporated. Lastly, add the feta cheese and fold in gently.
  2. Serve with balsamic vinegar glaze to taste.
