Apple Cinnamon Muffins with Almonds

A one-bowl muffin mix packed with finely cut Washington Fuji apples makes these an easy treat that you can have as part of your breakfast or as a snack. It’s also great for school lunch boxes.

Apple Cinnamon Muffins with Nuts

You will core and peel about 4 or 5 Washington Fuji apples and cut them into small cubes. The rest of the ingredients are added to a large bowl, and you just need to mix everything together. You can add spices such as ground ginger, or a little nutmeg.

Apple Cinnamon Muffins with Nuts

We used chopped almonds for our recipe, but you can substitute for any other nut you prefer such as peanuts, walnuts, or even pecans.

Apple Cinnamon Muffins with Almonds

Makes about 12 muffins

Ingredients:
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
½ teaspoon salt
2 eggs
1 cup vegetable oil
1 cup sugar
1 teaspoon vanilla extract
4 cups peeled and chopped Gala Washington Apples
1 cup unsalted toasted peanuts or toasted almonds

Preparation:

  1. Preheat oven to 350°F.
  2. In a small bowl, stir together the flour, cinnamon, baking soda, and salt. Set aside.
  3. In a large bowl, beat the eggs until foamy. Then beat in the oil, sugar, and vanilla. Stir the flour mixture into the wet ingredients until blended. Then stir in the apples and nuts.
  4. Spoon the batter into 2½-inch muffin tins lined with paper muffin cups. Bake for 15 to 20 minutes or until a pick inserted in the center comes out clean. Remove from pans and serve warm or at room temperature.
