Banana Nut Bread

The key to a successful banana bread is to add ripe bananas to the mix. Not just yellow with little dark spots, we mean blackened peels. That’s what you are looking for if you want the sweetest, most delicious banana bread.  You can use 3 or 4 medium bananas for this recipe, and we like to use an extra one for the top, as a garnish.

Banana Nut Bread

For the garnish, cut a banana lengthwise in half, and just let it sit on top of the batter before putting it into the oven. Since the batter is so dense, it does take a while to bake: 60 to 65 minutes. We added Naú Cranberry Mango Nut Mix to the batter to give a nice nutty flavor and we do recommend you add some semi sweet mini chocolate chips to the mix, if you have them available. It adds an extra touch of sweetness to balance the saltiness from the nut mix.

There is no baking powder in this recipe, we use baking soda as a leavening agent. It reacts with the acidity of yogurt and sugar to make our dough rise.

Banana Nut Bread

One 8.5-by-4.5 inch loaf, about 8-10 servings

Ingredients:
1 ¾ cup (231 g) all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
¼ teaspoon ground cinnamon
1 stick (8 tablespoons) unsalted butter, melted and slightly cooled
1 ½ cups mashed bananas (about 3-4)
½ cup (100 g) white sugar
½ cup (100 g) brown sugar
¼ cup (60 mL) Greek yogurt
2 eggs
1 teaspoon pure vanilla extract
¾ cup cranberry and mango Naú mix
1 banana, sliced lengthwise, for garnish
optional: 1 cup mini chocolate chips

Instructions

  1. Preheat oven to 350°F / 177°C.
  2. Spray a loaf pan (8.5-by-4.5 inch)with nonstick cooking spray.
  3. In a medium bowl, whisk together flour, baking soda, salt, and ground cinnamon. Set aside.
  4. In a large mixing bowl, whisk together melted butter, mashed banana, both sugars, and yogurt until evenly combined. Whisk in eggs and vanilla.
  5. Add dry ingredients to wet and stir just until no dry spots remain. Fold in the nut mix and chocolate chips, if using.
  6. Pour batter into the prepared loaf pan. Bake until a tester inserted in the center comes out clean, 60 to 65 minutes. Allow to cool before slicing.
