Quinoa Salad

A fresh and healthy salad made with quinoa as the base. We used Mondu vegetable consomé as the liquid to flavor our quinoa. We love that this is an all-natural option. Try it on its own or as a side dish for grilled chicken.

Quinoa Salad

Recipe adapted from Taste of Home
Yields 4 servings

Ingredients, for the salad:
2 cups vegetable broth (made from Mondu broth concentrate)
1 cup quinoa, rinsed
1 cup chopped Granny Smith Apple
1 cup chopped cucumber
1/2 cup minced fresh parsley
1 green onion, thinly sliced
1 cup cubed avocado

Ingredients, for the dressing:
1/4 cup olive oil
2 teaspoons grated lemon zest
2 tablespoons lemon juice
2 teaspoons minced fresh ginger
3/4 teaspoon salt

Instructions:

  1. For the dressing, in a small bowl, whisk all the ingredients together.
  2. In a small saucepan, bring broth to a boil. Add quinoa. Reduce heat; simmer, covered, for 12-15 minutes or until liquid is absorbed. Remove from heat, and fluff with a fork. Transfer to a large bowl and let it come to room temperature.
  3. Add apple, cucumber, parsley, and green onion to the quinoa. Drizzle with dressing and toss to coat. Serve or refrigerate and serve cold. Gently stir in avocado before serving.
