
Lentil Stew

It had been a long time since I had prepared lentils at home. Although we all like them, during the week we always focus on preparing menus around protein as the main ingredient. Now that the days have been cloudy and rainy, we crave these types of dishes, and this recipe has a lot of flavor and quite a few hidden vegetables.
Lentils can be served with rice, or on their own accompanied by bread slices. We served them with smoked pork chop squares on top and always garnish with fresh chopped parsley.

Lentil Stew
Makes 6 servings
Ingredients:
2 cups dry lentils
1 large onion, finely chopped
1 medium carrot, finely chopped
1 celery stalk, finely chopped
1 bell pepper, finely chopped
1 to 2 medium potatoes, chopped
4 roma tomatoes, grated
3 cloves of garlic, minced
6 to 8 strips of bacon, chopped
3 tbsp white wine
6 cups of broth (vegetable, chicken or beef)
2 tbsp soy sauce
1 tsp thyme
1 tsp oregano
1 tbsp paprika
2 tsp cumin
2 bay leaves
salt, black pepper, and chili flakes to taste
Directions:
- Start by heating a large pot on medium-high. Chop the bacon into 1 inch pieces and add to the hot pot. Once they start to brown and using the fat from the bacon add the chopped vegetables. Let them cook together for about 6 minutes.
- Grate the tomatoes by rubbing them against the large holes of a grater. Throw away the leftover large pieces of skin. Add to the pot, mix, and fry for one minute more, stirring once or twice to prevent it from sticking and burning.
- Add the lentils, the stock, and the spices and herbs. Mix well and bring to a boil and then reduce the heat to medium and keep at a lively simmer, stirring often, add the wine and soy sauce. Cook for 25-35 minutes or until the lentils are tender. Taste and check for salt, add more if needed.
- Serve hot. You can serve it along with rice, or by itself with bread slices. We serve it with smoked pork chops which we cut into squares and serve on top. Sprinkle with fresh parsley as garnish.
