Lemon Pepper Chicken Sandwich

There’s something irresistible about a juicy chicken burger packed with fresh flavors and a little zesty kick. This recipe makes the chicken extra flavorful by marinating chicken breasts in lime juice, olive oil, and Mondu Lemon Pepper for a bright, citrusy punch. To make it even tastier, we sautéd sweet onions until golden and slightly caramelized, adding a rich depth of flavor to every bite.

We also prepared a quick and creamy Lemon Garlic Mayonnaise, made with Mondu Granulated Garlic for a mellow, aromatic touch that balances the tang of fresh lime.

Layer it all on your favorite bun with buttery avocado slices and a handful of peppery baby arugula, and you’ve got a chicken burger that’s fresh, flavorful, and anything but ordinary. Perfect for weeknight dinners or weekend gatherings, this is a burger worth savoring.

Lemon Pepper Chicken Sandwich

Yields: 4 servings

Ingredients, for the chicken marinade:
2 large boneless skinless chicken breasts
juice of 1 lime
2 tbsp olive oil
1/2 tsp salt
1 tsp Mondu Lemon Pepper

Ingredients, for the lemon garlic mayonnaise:
¼ cup mayonnaise
½ lime, juiced
1 tsp Mondu Granulated Garlic
Sal and Pepper, to taste

Ingredients, for the sandwich:
1 white onion, sliced
1 tbs butter
2 cups baby arugula
1 avocado, sliced
4 buns of your choice

Directions:

  1. Slice each chicken breast in half lengthwise and pound them to even their thickness. Place them in a bowl and add the marinade ingredients. Let marinate for at least 30 minutes at room temperature, and up to 4 hours in the refrigerator.
  2. Make the lemon garlic mayonnaise by mixing all the ingredients together in a small bowl. Set aside.
  3. Heat a large pan over medium heat and add 1 tbs olive oil. Cook the chicken for 4-5 minutes on each side, or until it reaches 165F. Transfer to a plate.
  4. In the same pan, and off the heat: add the butter. When it starts to bubble add the white onion slices and sauté until soft and browned. Season with salt and pepper to taste and set aside.
  5. Optional, but recommended: Slice or open up the buns and toast them on a lightly greased pan for about 1 to 2 minutes until they are golden brown.
  6. To assemble, spread the prepared mayonnaise on the bottom half of the bun, layer on the arugula, sautéed onion, chicken and avocado. Enjoy!
