Muffins de Calabaza Fáciles

Oficialmente es temporada de Calabaza 🍁 Y si…. lo sé, esta es una receta de Muffins de Calabaza más en el site, pero créanme que esta receta requiere mínimo esfuerzo y un par de tazones que se volverá una favorita… más para esas tardes de antojos de algo dulce.

Muffins de Calabaza Fáciles

Adaptado de Lunch Pails and Lipstick
Rinde: 12 muffins

Ingredientes, para los muffins:
1 ½ tazas de harina de todo uso
1 cucharadita de polvo de hornear
1 cucharadita de canela
½ cucharadita de nuez moscada
½ cucharadita de sal
1 taza de puré de calabaza
⅓ taza de aceite vegetal o aceite neutral
2 huevos
1 cucharadita de vainilla
1 ¼ taza de azúcar

Ingredientes, para el topping:
1 cucharada de azúcar
1 cucharadita de canela

Instructiones:

  1. Preheat oven to 350ºF.
  2. Prepare a muffin tin with 12 cupcake liners.
  3. For the topping, mix together 1 teaspoon of sugar and 1 teaspoon of cinnamon in a small bowl, set aside.
  4. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg and salt.
  5. In a large bowl, whisk the pumpkin puree, oil, eggs and vanilla until smooth.
  6. Add in the flour mix until combined and you no longer see strokes of flour, careful not to over-mix.
  7. Divide the batter evenly among the muffin cups, sprinkling the cinnamon and sugar mix on top of each muffin.
  8. Bake from 25 to 30 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Cool for 5 minutes before turning them out onto a cooling rack.
