Easy Pumpkin Muffins

It’s officially Pumpkin Season 🍁 And I know, it’s one more Pumpkin Muffin recipe, but trust me when we say that this is a quick and easy one bowl recipe that will be in your favorites as soon as you prepare it.

Quick Pumpkin Muffins

Adapted from Lunch Pails and Lipstick
Yields: 12 muffins

Ingredients, for the muffins:
1 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon of cinnamon
½ teaspoon of nutmeg
½ teaspoon salt
1 cup pumpkin puree
⅓ cup vegetable or neutral oil
2 eggs
1 teaspoon of vanilla
1 ¼ cups sugar

Ingredients, for the topping:
1 tablespoon sugar
1 teaspoon cinnamon

Instructions:

  1. Preheat oven to 350ºF.
  2. Prepare a muffin tin with 12 cupcake liners.
  3. For the topping, mix together 1 teaspoon of sugar and 1 teaspoon of cinnamon in a small bowl, set aside.
  4. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg and salt.
  5. In a large bowl, whisk the pumpkin puree, oil, eggs and vanilla until smooth.
  6. Add in the flour mix until combined and you no longer see strokes of flour, careful not to over-mix.
  7. Divide the batter evenly among the muffin cups, sprinkling the cinnamon and sugar mix on top of each muffin.
  8. Bake from 25 to 30 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Cool for 5 minutes before turning them out onto a cooling rack.
