Cranberry Bread

This Cranberry Bread is the perfect host gift for all the holiday parties for the end of year. I can’t remember how many times I’ve baked it the night before a holiday get together… hence not many pictures!  This loaf works wonders when adding a bit of orange juice and peel.

Also, as we usually don’t have fresh cranberries all the time, I buy a few bags at once and freeze them up. This recipe works perfectly with frozen cranberries. If you’re using fresh cranberries, cover them with flour so they don’t sink at the bottom and if using frozen fold them carefully as is, at the very end.

Make sure to drizzle the glaze over the loaf while it’s bit a bit warm so it absorbs all the goodness!

Cranberry Bread

Recipe from Two Peas & Their Pod
Makes 1 loaf (about 12 servings)

Ingredients, for the loaf:
1 ½ cups all-purpose flour
½ teaspoon salt
1 teaspoon baking powder
1 cup sugar
zest of 1 orange
¾ cup buttermilk
½ cup canola or vegetable oil
2 large eggs
1 tablespoon fresh orange juice
½ teaspoon vanilla extract
1 cup fresh cranberries

Ingredients, for the glaze:
1 cup powdered sugar
1 ½ tablespoons fresh orange juice

Directions:

  1. Preheat oven to 350° F. Spray a 8-x-5-inch loaf pan with parchment paper.
  2. In a large bowl, whisk together the flour, salt, and baking powder. In a small bowl, combine sugar and orange zest. Whisk into the flour and set aside.
  3. In a separate medium bowl, combine the buttermilk, oil, eggs, orange juice, and vanilla.
  4. Slowly add the wet ingredients to the dry ingredients. Stir until just combined. Fold in the cranberries.
  5. Pour batter into prepared loaf pan.
  6. Bake for 70-75 minutes, or until toothpick comes out clean. If your loaf starts to get too brown drape a piece of foil over the top to finish baking during the last 10 minutes of the baking time.
  7. Remove bread from oven and place on a cooling rack and cool for 15 minutes. Remove loaf from pan with the parchment paper. Peel the paper off and move to wire rack.
  8. While the bread is cooling, make the orange glaze. In a small bowl, combine powdered sugar, orange juice, and orange zest. Whisk until smooth. Drizzle the glaze over warm bread.
