Honey-Soy Glazed Chicken Wings

When we make chicken wings, it’s usually for the weekend or Friday night. Especially if we have a family activity, like movie night or an important soccer game to watch on TV.

This recipe calls for 4lbs chicken wings, for 6-8 servings. The combination of soy sauce and honey for the marinade gives them a delicious flavor, and we recommend that you leave them marinating the night before. As variations, and if you and all your guests like spicy food, you can add chopped jalapeños to the marinade. If you remove the seeds, most of the heat goes away. Make sure you protect your fingers with some oil and wash your hands really well after handling the chilies.

Honey-Soy Glazed Chicken Wings

In the instructions, you will see that the marinade in which the raw wings spend several hours in, will be used to bathe them when they are cooking. There is no danger here because the marinade will spend all the time in the refrigerator and also, before using it we will let it come to a gentle boil (so that it does not consume) for 8-10 minutes. Chicken Wings

Recipe adapted from Karen’s Kitchen Stories
8 servings

Ingredients

4 pounds chicken wings
1/4 cup plus two tablespoons soy sauce
2 tablespoons honey
3 tablespoons brown sugar
3 tablespoons rice vinegar
1 tablespoon minced fresh ginger
2 cloves fresh garlic, minced
4 scallions, thinly sliced
¼ teaspoon red pepper flakes
1/2 teaspoon black pepper
1 teaspoon salt
Sesame seeds for garnish (optional)


Procedure:

  1. Using a sharp knife, separate the wings into 3 pieces. Discard the wing tips or save and freeze them for stock.
  2. Combine the soy sauce, honey, brown sugar, vinegar, ginger, garlic, half of the scallions, the red pepper flakes, pepper, and salt into a large bowl.
  3. Add the wings and toss to coat. Cover and refrigerate for at least 8 hours, or overnight.
  4. Heat the oven to 375 degrees F. Line two rimmed baking sheets with foil and set wire racks in the sheets. Spray with spray oil.
  5. Reserving the marinade, evenly divide the wings among the baking sheets. Roast the wings in the oven for 30 minutes.
  6. Meanwhile, bring the reserved marinade to a simmer in a small saucepan. Let is simmer for 8-10 min. Set aside.
  7. After the wings have roasted for 30 minutes, brush both sides with the marinade and return them to the oven for 30 minutes more.
  8. Brush the wings again with the rest of the marinade and roast for another 15 minutes.
  9. Sprinkle lightly with the sesame seeds the remaining scallions and serve.
