Little Foodies: Chocolate Cake Balls

Do you have any leftover cake at home? You can easily turn it into a new dessert, by making it into cake balls. Or, you can prepare a cake using 1 box of cake mix, if you don’t want to make too many cake balls, you will get around 50, you can freeze half of the cake for later use. This is a fun project to make with kids, they can turn the cake into crumbs and help form the cake balls and after coating, they love adding the sprinkles. This is an ideal recipe for them to make for a special occasion. Maybe it’s a grandparent’s birthday, or they want to surprise a parent with them.  It’s also a great addition to a candy station!

The process is very simple, you just need to turn the baked cake into fine crumbs, either using your hands or a food processor. Once your crumbs are formed, add your favorite frosting or buttercream. The only important thing here is to add a tablespoon at a time until you have reached the consistency that resembles playdough. If you add too much frosting, the dough will be too loose, and your cake balls will not be firm.

There isn’t a specific recipe, because the amount of frosting will depend on how moist your cake is, but in general, if you use the entire cake from 1 box of cake mix, you will need about 12 ounces of frosting, which is about ¾ of the container. You will get about 48 cake balls, of about 1 ½ inch in size. 

We wanted chocolate cake balls, covered in chocolate, so we used chocolate cake mix with chocolate frosting, and we covered them in melted semi-sweet chocolate. You can opt for any flavor of cake you prefer, you can make red velvet cake balls using cream cheese frosting and coat them with white candy melts. Or you can use vanilla cake, mixed with vanilla frosting and coat with melted chocolate, or any color candy melt you prefer.

At Almacenes Siman we found some great mixing bowls, which were the ideal size and happen to have a lovely design by The Pioneer Woman, and a mixing spoon which has a good solid handle which helped us mix in the frosting. We always find colorful kitchen towels which are handy to have on hand, especially when cooking with kids.

Chocolate Cake Balls

Steps based from Bakerella
Yields 24 cake balls

Ingredients:
½ prepared Cake Mix Cake
about 2 tablespoons of chocolate frosting
12-oz. semi-sweet chocolate
colored sprinkles
wax paper

Procedure:

  1. After the cake is cooked and cooled completely, crumble into a large bowl to form fine crumbs. (Use half of the cake and freeze the other half for later use).
  2. Mix thoroughly with chocolate frosting, 1 tablespoon at a time until you get the consistency of playdough and you can form balls that hold their shape.
  3. Using a tablespoon measure, roll the mixture into balls and lay on a cookie sheet lined with wax paper.
  4. Chill in the refrigerator for 1 hour, or in the freezer for 20 minutes.
  5. Melt semi-sweet chocolate in a microwave or a double boiler (the package will have melting instructions.
  6. Place the melted chocolate into a small bowl, such as a cereal bowl, and let it come to room temperature.
  7. To coat the cake balls, lower them into the melted chocolate and use a spoon to cover the top with it.
  8. Once it is well coated, lift with your spoon and tap off the extra chocolate against the side of the bowl.
  9. Place on the baking sheet lined with wax paper and use your favorite sprinkles to decorate before the chocolate sets.
  10. You can keep them in the refrigerator, but they won’t last long!
