Little Foodies: Cake Mix Confetti Cookies

These are the easiest cookies you will ever make; you only need 4 ingredients to enjoy these beautifully round and chewy confetti cookies: cake mix, oil, eggs, and sprinkles. What we love best about this recipe, aside from how delicious they are, is how little clean up you need to do afterward since you only use one bowl and a spoon to mix it all in, and they are so simple to put together, the kids can do it all themselves.

Little Foodies: Cake Mix Confetti Cookies

You can use any cake mix variety you prefer. For this post, we chose a confetti cake mix, but you can try it with chocolate or yellow cake as well and you can mix in nuts or chocolate chips into your batter.  Don’t skip the sifting step, it will make sure no lumps are on the batter and it helps all the ingredients incorporate correctly. If you use confetti cake mix, and the sprinkles are left behind on the sifter, just add them back in. The sprinkles we used were shaped sprinkles, which we prefer to regular nonpareils to make sure they won’t bleed color onto our wet dough.  You can use jimmies or the shaped sprinkles you see on our photos.

You can also substitute the oil with butter, in equal amounts. Use 1/3 cup melted butter. However, the resulting cooking will look different, it will be flatter.
To portion the dough, we used an ice cream scooper of 1 ½ tablespoon and placed no more than 6 portions on each cookie sheet to bake for 10-11 minutes. You can also use two spoons to transfer the dough onto your cookie sheet, trying to round them as best as you can.  Keep an eye on them when the timer reaches 10 minutes, they should be just slightly golden on the edges.

Cake Mix Confetti Cookies

Recipe adapted from The Preppy Kitchen
Yields  18 cookies

Ingredients:

1 15.25 oz bag white cake mix 
2 eggs room temperature
1/3 cup vegetable oil
1/4 cup sprinkles 

Procedure:

  1. Preheat oven to 350F. Sift the cake mix into a large bowl. 
  2. Add eggs and oil.
  3. Mix together until well combined then fold in sprinkles if you want to add more.
  4. Place dollops of the batter, about 2 tablespoons in size, onto a prepared baking sheet. Place 6 on each cookie sheet, leaving space between them. Place sprinkles on top of each cookie.
  5. Bake for about 10-11 minutes. 
  6. Allow the cookies to remain 1 minute on the cookie sheet and transfer to a wire rack to cool and enjoy!
