Roasted Radishes

We are always looking for new ways to prepare foods to keep variety in our weekly menus. This time we tried out roasting radishes with onions with a simple olive oil, salt and pepper mixture.  We loved the result! They are tender, sweet and mild.  So if you don’t like radishes, this recipe might change your mind.

This is the basic recipe, but feel free to use other herbs and spices to include in this recipe, such as garlic powder, or fresh thyme.

Roasted Radishes

Yields 4-6 servings

Ingredients:
2 large bunches radishes (about 1 pound each trimmed of the greens)
1 pound spring onions or shallots
1 tablespoon extra virgin olive oil
1 teaspoon salt, or to taste
½ teaspoon black pepper

Directions:

  1. Preheat oven to 425°F.
  2. Halve the radishes or quarter them, so they all have a similar size.
  3. Cut the onions into quarters the size of the radish pieces.
  4. Place onto a rimmed cookie sheet.
  5. Drizzle the oil over the vegetables, sprinkle the salt and black pepper over the top and toss to coat, spreading the radishes and onions out into a single layer.
  6. Roast for 10 minutes, lower the heat to 350°F, stir the vegetables, and roast for 20 to 30 more minutes, stirring every 10 minutes, or until the vegetables are deeply caramelized on the outside and tender on the inside.
  7. Adjust salt as needed.
