Mashed Potatoes (Classic Potato Purée)

This is our go-to mashed potatoes recipe at home, the texture we get from russet potatoes is delicious, and the flavor given by the hot milk with herbs and garlic is fantastic. This is a great recipe to include in your Christmas dinner!

Classic Potato Purée

Makes 4-6 servings

Ingredients:
6 russet potatoes (approximately 3 pounds)
1 cup whole milk
1 sprig of thyme and/or fresh rosemary
2 cloves of garlic
kitchen salt
2 teaspoons of fine salt
¾ stick butter, unsalted
Fresh parsley, chopped

Directions:

  1. Peel and cut the potatoes into uniform pieces and place them in a large pot. Cover the pieces with cold water and add the kitchen salt. Cook over medium heat and simmer gently, 20 minutes, or until tender.
  2. Meanwhile, in a small saucepan add the milk, herbs and garlic. Heat the milk, but do not boil it. Set aside to infuse with the flavorings.
  3. Using a large colander, drain the potatoes and let them dry. Using a masher or stand mixer, mash the potatoes and blend until smooth.
  4. Add the hot milk and continue mashing or beating to incorporate it well. Add the butter little by little while continuing to mix, and season with the 2 teaspoons of fine salt.
  5. To serve, sprinkle with fresh chopped parsley.
