Mediterranean Stir Fry

An easy and quick meal to prepare, in which we can take advantage of the vegetables we have available at home. It’s delicious served with crumbled feta cheese, but you can use any other dry, salty cheese.

Mediterranean Stir Fry

The flavor and juices come from the vegetables and the simple spices and seasonings that make up this dish: salt, pepper, and oregano. We served it with rice and broccoli and the family loved it!

Mediterranean Stir Fry

Serves 4

Ingredients:
1 tablespoon olive oil
1 red bell pepper, diced
1 pint cherry tomatoes sliced in half
½ white onion, diced
8 ounces spinach
4 garlic cloves minced
2 green onion thinly sliced, white and green parts
1 pound ground beef
½ teaspoon dried oregano
Salt and pepper to taste
2 tablespoons crumbled feta
8-10 fresh basil leaves, chopped

Directions:

  1. Heat the oil in a large pan on medium-high heat. Add the bell pepper, cherry tomatoes, onion, green onion and sauté for 4-5 minutes, until the tomatoes are blistered, and soft. Add the garlic and stir another minute. Season with salt and pepper.
  2. Add the spinach. Stir for another 2-3 minutes, until the spinach has wilted. Remove vegetables to a plate.
  3. On the same pan, add a little more olive oil and once hot add the ground beef, oregano, salt, and pepper. Cook the ground beef until it’s browned, then drain off any excess grease.
  4. Transfer the veggies back to the pan and stir until warmed through. Garnish with crumbled feta and chopped fresh basil before serving.
