Roast Chicken with California Grapes

This chicken is a showstopper, it’s definitely a recipe for a special meal or when you just want to treat your family or friends, and the fabulous thing is that it is so easy to prepare! Red California Grapes give this chicken an elegant and colorful presentation, not to mention an amazing flavor.

Roast Chicken with California Grapes

Skin and bone in pieces are recommended for this recipe for maximum flavor, the pieces should be patted dry before roasting to help the skin get a golden color. You can use creamy Dijon mustard if the grainy kind is not available.

We have chosen red California grapes not only because of their beautiful color, but also because they provide a sweetness that is intensified when baked. The flavor combination is simply delicious.

Roast Chicken with California Grapes

Mashed potatoes or rice are a great side dish for this meal.

Roast Chicken with California Grapes

Yields: 4 servings

Ingredients:
3 pounds bone-in, skin-on, chicken pieces
2 tablespoons olive oil, divided
3 Tablespoons grainy mustard
1 teaspoon salt
Freshly ground black pepper
2 small red onions, peeled and quartered
¼ cup dry white wine
½ cup chicken broth
2 cups red California Grapes
4 to 6 sprigs of fresh thyme

Directions:

  1. Preheat oven to 425 º F Pat chicken dry and remove excess fat from the chicken pieces. ln a small bowl, mix the grainy mustard with 1 tablespoon olive oil and rub the mixture all over the chicken pieces. Season chicken generously with salt and black pepper.
  2. Heat the remaining tablespoon of olive oil in an ovenproof 12-inch heavy skillet and sauté the onions until slightly caramelized and softened about 5 minutes.
  3. Add the wine and chicken broth. Place the chicken pieces in the pan, skin side up. Top with thyme sprigs. Roast the chicken for about 15 – 20 minutes. Quickly baste the chicken pieces and add the grapes to the pan. Roast for an additional 15 – 20 minutes, until the grapes seem slightly blistered and cooked down.
  4. Serve immediately with crusty bread, or desired side.
