Baked Spiced Nuts

This post is also available in / Esta entrada también está disponible en ESPAÑOL (SPANISH)

The weekend is here! And we have a great nut and seed snack for you. It’s a blend of peanuts and cashews from Snacks Naú with a mix of spices and chili. We love nut and seed snacks because they are healthy, especially the baked brands, both peanuts, and cashews provide a source of protein and it’s been known that peanuts may reduce cholesterol levels helping fight heart disease.

The spice mixture includes paprika, chili, salt, sugar, pepper, and garlic powder. We infused it with some rosemary sprigs which gave them a more aromatic touch.  Frothy egg white is what makes the spice mixture stick to our peanuts and cashews, but if you want to keep it vegan you can use olive oil to help the spices stick. It won’t be as effective as egg white, which also makes the baked nuts crispy.

When the baking time is up, let them cool down on the baking tray for about 20 minutes, they will crisp up as they cool. Don’t worry if you feel like they are too soft when you take them out of the oven.

Peanuts are the go-to snack to pair with beer, so grab your favorite cold one and munch on this crunchy, spicy snack. You will love them as much as we did.

1 ½ cup peanuts
1 egg white
2 tablespoons smoked paprika
1 ½ teaspoon chili powder
1 ½ teaspoon garlic powder
¼ teaspoon cayenne pepper
¼ teaspoon Cobán chili pepper

2 springs of fresh rosemary

Instructions:

  1. Preheat your oven to 300ºF. Mix together the cashews, and peanuts in a large bowl.
  2. In a small bowl, stir together all the spices. In a separate small bowl, whisk the egg white until it’s frothy.
  3. Next, toss the nuts in the egg white mixture until well coated. Then, add the spice mixture and toss again.
  4. Spread the nuts in an even layer on a baking sheet, along with the rosemary springs, and place them in the oven for 20 minutes, tossing halfway.
  5. Remove the nuts from the oven and allow them to cool for at least 20 minutes. The nuts will continue to harden and crisp up once cooled.
